*Korean Beef Stew (Galbitang)**

Ingredients:

– 2 lbs beef short ribs
– 6 cups water
– 1 large radish, peeled and cut into chunks
– 1 onion, peeled
– 5 cloves garlic, peeled
– 2-3 green onions, chopped
– Salt and pepper to taste
– Soy sauce (optional)
– Cooked rice, for serving

Instructions:

1. **Prepare the Ribs:** Soak the beef short ribs in cold water for about 30 minutes to remove excess blood. Drain and rinse the ribs.
2. **Boil the Ribs:** In a large pot, bring 6 cups of water to a boil. Add the ribs and boil for 5 minutes. Drain and rinse the ribs again.
3. **Make the Broth:** In the same pot, add the drained ribs, 6 cups of fresh water, radish, onion, and garlic. Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours, or until the meat is tender.
4. **Season:** Remove the onion and garlic. Add salt and pepper to taste. You can also add a bit of soy sauce if desired.
5. **Serve:** Serve the soup hot, garnished with chopped green onions, and with a side of cooked rice.
