Cheesy Potato Casserole

Ingredients:

– 6 cups mashed potatoes (can be freshly made or leftover)
– 2 cups shredded cheddar cheese
– 1 cup sour cream
– 1/2 cup milk
– 4 slices cooked bacon, crumbled
– 3 green onions, finely chopped
– 2 cloves garlic, minced
– 1/2 teaspoon salt
– 1/2 teaspoon black pepper
– 1/4 cup chopped fresh parsley (optional)

Instructions:

1. **Preheat Oven:** Preheat your oven to 350°F (175°C).

2. **Prepare the Mixture:** In a large mixing bowl, combine the mashed potatoes, 1 1/2 cups of the shredded cheddar cheese, sour cream, milk, minced garlic, salt, and black pepper. Mix until well combined.

3. **Add Bacon and Green Onions:** Fold in the crumbled bacon and most of the green onions (reserve a few for garnish).

4. **Transfer to Baking Dish:** Spread the potato mixture into a lightly greased 9×13-inch baking dish.

5. **Top with Cheese:** Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top of the casserole.

6. **Bake:** Bake in the preheated oven for about 25-30 minutes, or until the cheese is melted and bubbly and the casserole is heated through.

7. **Garnish:** Remove from the oven and let it cool for a few minutes. Garnish with the remaining green onions and chopped fresh parsley if desired.

8. **Serve:** Serve warm as a side dish or main course.
